Seared Yellow Fin Tuna
Sushi grade tuna
Herbed olive oil, enough to lightly to coat

Apricot Summer Salad
Heirloom tomato
Red onion
Extra virgin olive oil

1 Scallion bunch, grilled

Green Goddess Dressing
2 garlic cloves
1 tbsp. Fresh ginger
1 C. Organic Spinach
1 C. Parsley
1/2 C. Basil
2 tsp. Dijon mustard
1 tbsp. Honey
3/4 C. White Balsamic
1 1/2 C. Olive Oil
Salt and pepper to taste
Combine all ingredients in a high speed blender purée until smooth.
